Best Spring Cocktails to Try in 2025 (With Beyond Spirits)
Spring in WA is all about sunshine, longer afternoons, and fresh local produce. It’s the season that makes you want to swap mulled wine and hot toddies for something bright, zesty, and served over plenty of ice.
So, we’ve pulled together a few of our favourite cocktails to celebrate the season. They’re crisp, citrus-led, and dangerously easy to drink — all made with Beyond spirits, crafted right here in Busselton.
🌿 Limoncello Gin Fizz
A splash of Tuscan sunshine in a glass. This fizz layers zesty limoncello with the herbal depth of Super Tuscan Gin, lifted with soda and finished with a hit of fresh mint.
Recipe
15mL fresh lemon or lime juice
60mL soda water
Fresh mint to garnish
Method
Build in a tall glass with ice, top with soda, stir gently, and crown with mint.
🍋 Tom Collins
A timeless classic that never goes out of style. Crisp, citrusy, and refreshing — basically spring in a glass.
Recipe
90mL Beyond x17 Gin
30mL Beyond Citron
2 Lemon halves
60mL soda water (we like Waves & Caves)
Method
Shake gin, lemon, and sugar with ice, strain into a tall glass, top with soda, and garnish with a lemon wheel.
🍯 Bee’s Knees
This Prohibition-era cocktail gets a WA spring upgrade with Margaret River honey and fresh citrus. It’s golden, floral, and just a little too easy to sip.
Recipe
2 tsp runny Margaret River honey
20mL fresh lemon juice
10mL fresh orange juice
Twist of orange peel to garnish
Method
Shake all ingredients hard with ice, strain into a chilled coupe, and finish with the orange twist.
🍊 Beyond Shiraz Negroni
Dark and complex, but still bright enough for spring afternoons. Shiraz Gin meets Citrus Bomb Gin and our Orange Amaro for a bold take on the Italian classic.

Method
Stir with ice in a rocks glass, garnish with a wedge of orange or a sprig of rosemary.
🥂 Simple Beyond Gin & Tonic
Sometimes, nothing beats the classic. Crisp, refreshing, and perfect for lazy afternoons with friends.
Recipe
120mL good-quality tonic water
Garnish: lime wedge, lemon twist, or fresh rosemary sprig
Method
Fill a highball with ice, pour in gin, top with tonic, and garnish how you like it.
