Back in 2016, Greg and his good mate Steve started tinkering with Margaret River grapes and fell head-first into the aromatic world of pisco—fine, expressive, and dangerously sip-able. This tiny release comes from a rescued 2011 Margaret River Semillon base.
What it tastes like
Clean and bright with lifted florals, a hint of citrus peel and stone fruit, all wrapped in a silky, mouth-filling palate. Refreshing, elegant, moreish.
How to drink it
Pisco Sour (the classic): pisco, fresh lime, a touch of sweetness, foamy top.
Piscola (if you must): highball, cola, ice, lime. Zero judgement.
Chilcano: ginger, lime, bitters and bubbles for a zesty highball.
