At Beyond Distilling, owning a barrel means being part of the process — from the farm to the glass.

With BeStill Whisky, you get to shape your own whisky profile by:

  • Choosing the farm your grain comes from

  • Selecting the malting style

  • Picking the barrel your whisky will mature in

We’ll even engrave a plaque on your barrel — your name, a message, whatever you want — making it yours from day one.

Everything is made using single-origin grains, all brewed, distilled, and matured within 150km of the farm. Every bottle is a real piece of WA heritage, crafted your way.

You can also gift a barrel — for someone special, for a milestone, or just because good whisky should always come with a good story.

  • Once your whisky has matured and your barrel is ready, we complete the journey with a custom gold plaque, elegantly affixed to the front of your barrel. This is all inclusive of the cost.

    What you choose to engrave is entirely up to you — whether it’s a name, a date, a meaningful phrase, or a dedication to someone special. This final detail adds a personal touch, transforming your barrel into a treasured keepsake or a truly remarkable gift.

  • Every barrel of whisky is crafted onsite at our Busselton distillery using local ingredients sourced from either Wagin or Boyup Brook. Each step—from fermentation to barrel-aging—is completed in-house to ensure uncompromised quality and traceability.

  • You’ll start by customising your whisky profile —
    choose your preferred farm, malting style (light or smoked), and select your barrel finish from our premium range.

    Once your whisky is ready, you can either:

    • Keep your barrel at the Busselton Distillery for private tastings in the Whisky Room, or

    • Have it shipped direct to you, wherever you are.

    Every barrel is finished with a personalised gold plaque — your signature on a whisky that’s truly yours.

THE PROCESS

  • Absolutely. You can engrave a special message on the barrel plaque or leave it blank for the recipient to personalise later.
    We can help you customise the whisky profile, or leave it open so they can create their own.

    We also offer direct shipping to the person you’re gifting it to, and can include a handwritten card with your personalised message — just let us know when you order or contact us here for more info!

    Please note: the cost of engraving is included in the barrel price, provided it is completed before the barrel leaves the distillery.

PERSONALISATION

  • Delivery of your barrel directly to your home or workplace is included in the purchase price—no hidden fees, no extra steps.

  • While your barrel is with us, you — or your nominated friends or clients — are invited to enjoy private whisky tastings straight from your barrel in our dedicated Whisky Room.

    Each tasting is recorded in your personal whisky journal, alongside detailed barrel notes that capture its evolving character.
    Please note: Your barrel will never be opened for tasting unless you are present and have given prior approval.

    You’re welcome to store your barrel at our Busselton distillery free of charge for up to 24 months.
    After that, if the barrel hasn't been collected or bottled, a storage fee of $20 per month will apply.

  • Insurance Fee
    For coverage against fire and theft, the annual insurance fee is $200 per barrel in 2025.

    Bottling Charges
    If you'd like to bottle your whisky, whether for gifting or personal use, a bottling charge will apply. This charge covers the cost of the glass bottle, box, and closure.
    We offer bottling options starting at $6 per bottle and going up to $100 per bottle, depending on your preferences.

    Delivery
    Delivery of your barrel to a home or workplace address is free.

    Storage Options
    You’re welcome to store your barrel at our Busselton distillery free of charge for up to 24 months.
    After that, if the barrel hasn't been collected or bottled, a storage fee of $20 per month will apply.

    Private Tastings
    If you store your barrel at the distillery, you'll have access to private tastings in the Whisky Room with your barrel. For more information on delivery and storage FAQs, please refer to the section above.

    Wagin, WA

    • Known for: Premium-quality grain, grown in the dry heartland of WA’s wheatbelt

    • What it brings: Bold flavour, a classic country WA profile with rich grain notes

    • Perfect for: Those who love a traditional, earthy, and full-bodied foundation

    Boyup Brook, WA

    • Known for: Cooler climate farming with lush pastures and fresh seasonal harvests

    • What it brings: Smoother texture, more refined character, and subtle complexity

    • Perfect for: Those who want a softer, elegant style with a modern edge

    Whichever you choose, the barley is single-source and traceable — right back to the paddock.

  • The difference between light and smoked malting in whisky lies in how the barley is dried and the flavour profile it creates:

    Light Malting

    • Process: Barley is dried using hot air without exposure to smoke.

    • Flavour Profile: Clean, smooth, and more neutral. You’ll get lighter, sweeter notes — think honey, biscuit, cereal, and subtle fruit.

    • Best For: Those who prefer classic, elegant single malts or want the grain and cask influence to shine.

    Smoked Malting (Peated)

    • Process: Barley is dried over burning peat, a type of organic matter found in bogs. The smoke infuses the grain with phenols.

    • Flavour Profile: Bold, earthy, and savoury — with notes of smoke, bonfire, iodine, leather, or even seaweed, depending on the peat source.

    • Best For: Fans of smoky Scotch-style whiskies or those looking for something intense and complex.

  • Each barrel brings its own unique flavour story. Here’s a quick guide to help you pick the one that matches your taste:

    🟤 Pedro Ximénez (PX) Sherry

    • Flavour Influence: Rich, sweet, and syrupy

    • Expect: Dried figs, raisins, toffee, and dark chocolate

    🔴 Porto Tawny

    • Flavour Influence: Aged port with soft, nutty sweetness
