Sustainable Distilling: How We’re Doing Spirits Differently

At Beyond Distilling, we don’t just make spirits — we make them properly. From the ground up. And that means thinking about how every step of our process impacts the people and places around us.

Because what’s the point of crafting something beautiful if it costs the planet?

🌾 It starts with local grain

Our spirits begin in the dirt — quite literally. We source grain from farms across Western Australia’s South West and Mid West, working with growers we know and trust. By staying local, we’re cutting down on transport emissions, supporting WA farmers, and giving our spirits a true sense of place. That grain doesn’t just taste better — it feels better.

🔄 We make everything from scratch

We don’t buy in bulk neutral spirits or outsource fermentation. Every drop is fermented, distilled, bottled, and packed in-house at our Busselton distillery. That gives us full control over waste, energy use, and ingredient quality — and keeps things honest.

☀️ Powered by the sun

The distillery runs on solar power (with a bit of help from the grid on cloudy days). It's a big step toward reducing our footprint, and we’re constantly looking for ways to make our production even cleaner.

💧 Water recycling & low-waste mindset

Distilling uses a lot of water — but we don’t let it go to waste. Our cooling systems are designed to reuse water wherever possible, and we repurpose leftover botanicals and grain waste through local partnerships.

We believe sustainability isn’t just environmental — it’s social. By partnering with local farmers, artists, and event organisers, we’re investing in our community. And yeah, that includes making sure our cocktail classes, whisky experiences, and gin academy aren’t just fun, but also thoughtful.
